vegan banana cookies from long ago

Years-old recipe; I have no idea where it came from. Adjusted slightly. Chewy and not too sweet.

  • ⅓ cup brown sugar
  • ½ cup whole-wheat flour
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon powdered ginger
  • ¼ cup vegetable oil
  • ⅓ cup water
  • 1 cup mashed banana
  • 1¾ cup old-fashioned oats, uncooked
  • ½ cup chopped nuts (walnuts or pecans work well)
  1. Preheat oven to 350 deg F.
  2. Sift dry ingredients except oats and nuts.
  3. Mix oil, water, banana. Add to dry.
  4. Add oats and nuts to rest of mixture and stir to blend.
  5. Drop onto parchment-covered baking sheet (between 1-2 tablespoonfuls per cookie) and bake for 8-15 minutes.
  6. Keep in airtight container for a few days at room temp. They'll soften more in time, but remain chewy.
