½ teaspoon salt (or more, to taste, depending on how salty your chips are)
1½ teaspoons sugar
½ teaspoon cumin
Instructions
Preheat oven to 350 degrees F.
Oil baking dish slightly. Leaving skin on, slice onion in half and place cut side down into dish.
Leaving skin on, drizzle garlic cloves with oil, wrap tightly in foil packet and place in baking dish with onion. Roast for 1 hour, until onion is caramelized and garlic is soft.*
Meanwhile, prepare jalapeno and green tomatoes: place into another lightly oiled baking dish. Roast for 35 minutes, or until pepper and tomatoes are soft (but not necessarily squishy). Allow to cool to room temperature.
Peel pepper and de-seed, if desired (more seeds mean more heat if using a jalapeno), and set aside.
Coarsely cut up tomatoes and onion. Using a food processor, process to a chunky puree.
Mince pepper finely and add to tomato mixture.
Add lemon juice, salt, sugar and cumin. Allow to sit for at least 15 minutes to allow flavors to meld. Enjoy with tortilla chips, eggs, or meat. And, if you are lucky, a burrito.
Notes
* The garlic may go faster so check it before an hour is up.
