  • eggs*
  1. Place eggs in saucepan large enough to hold them in single layer.
  2. Add cold water to cover eggs by 1 inch. Heat over high heat just to boiling. Remove from heat and cover pan.
  3. Let eggs stand in hot water about 11 minutes for large eggs (9 minutes for medium eggs; 14 minutes for extra large).
  4. Drain immediately and serve warm. Or cool completely under cold running water or in bowl of ice water, then refrigerate.
* While eggs fresh from the nest are rich in flavor and have beautiful saffron-colored yolks, eggs that have been sitting in the fridge for a few days (or longer) are actually easier to use for boiling. They peel much more easily.
