coffee tapioca recipe

  • 2 cups strong brewed coffee
  • ½ cup sugar
  • ½ cup instant tapioca
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ½ cup whole milk
  • ½ cup Greek yogurt sweetened with 1 tablespoon sugar and 1 teaspoon almond extract (The original recipe called for whipped cream.)
  1. In a medium saucepan combine coffee, ½ cup sugar, tapioca, vanilla, and salt. Stir well and let sit for 5 minutes.
  2. Bring mixture to a full boil over medium heat, stirring constantly. You'll know it's ready when the mixture continues bubbling while being stirred. Remove from heat and add whole milk. The mixture will seem thin, but that's okay. Divide among 6 serving glasses. Chill for 2-3 hours.
  3. In a small bowl, mix yogurt, sugar, and almond extract until smooth. Divide sweetened yogurt among chilled portions. Top with a small sprinkle of cinnamon.
