watermelon-feta salad recipe

  • 3 cups of cubed watermelon, chilled
  • 2 teaspoons rice vinegar
  • 2 ounces crumbled feta cheese
  • 2-3 tablespoons loosely packed fresh mint leaves, coarsely chopped
  • freshly ground pepper
  1. Using your fingers, gently toss melon with rice vinegar, feta cheese and mint. Transfer to serving dish. Season with pepper. Serve immediately, as the vinegar will break down the watermelon over time.
  2. Serves 1-2. See the header photo? I ate the entire plate as part of my lunch.
