1 pound bowtie pasta (I like the whole-wheat variety)
oil for frying
salt to season
½ cup Parmesan cheese, finely grated
finely minced parsley, for garnish
Instructions
Cook the pasta according to package directions, but ONLY for half of the cooking time. Drain the pasta and shake well.
Heat oil to moderate heat in a deep cast iron pot, using enough oil to cover the pasta. Working in batches, fry the pasta until golden, flipping halfway. These cook fast as the oil heats up. As soon as they start to turn brown, start pulling them out.
Immediately season with salt and sprinkle with Parmesan. Repeat the process until all of the pasta is fried. Sprinkle with parsley before serving.
