Honey Simple Syrup with ginger: 1 part honey (non-creamed)
1 part water
about an inch of fresh ginger, peeled and sliced
Instructions
Heat gently honey and water over medium heat to just simmering. Add ginger slices. Remove from heat.
Cool completely, remove ginger slices, and refrigerate syrup. May be kept for months refrigerated.
Squeeze juice from limes into each glass.
Assembling the drinks: Obviously, it is to your preference on sweetness level, so my taste-testing is just a guide. My husband often likes his citrus drinks more sour than I do, so there is always a back-and-forth between us on how much sweetness is needed when I mix up a batch of freshly-squeezed citrus drink.
For each glass, I used less than 1 ounce (<40 ml) of lime juice, almost 4 ounces (120 ml) of honey syrup, and then topped it with seltzer water in a 10-ounce glass. Stir, taste and adjust sweetness. If your syrup and water are pre-chilled, no need for ice. Garnish with a couple slices of fresh ginger.
