4 ounces (about 1 cup or 113 g) dried strawberries, preferably unsweetened
2 tablespoons coconut oil, slightly warmed but not melted
½ cup dried unsweetened coconut, shredded, plus more for dredging
Pinch of nutmeg
Pinch of powdered ginger
Pinch of saffron mixed with 1 teaspoon warm water (totally optional, for a bit of color. Alternatively, you can just use some plain warm water.)
Instructions
Allow saffron and water to sit for a few minutes to soften saffron.
Put all ingredients into a food processor and blend until mixed well. This may take about 3 minutes and your processor contents may warm up. The mixed product will look a bit greasy from the coconut oil.
Roll into small balls then dredge in unsweetened coconut.
Place in the refrigerator for at least 30 minutes to firm up. They taste good at room temperature or cold. They last for months if refrigerated.
