Ingredients
scant 1¾ cup (375 ml) bourbon
⅓ to ½ cup sugar (check how sweet your cherries are to decide)
1 cinnamon stick
2 cups (450 g = 1 pound) fresh cherries, pitted
SPECIAL EQUIPMENT: Jar with screw lid, 1 quart size
Instructions
Warm the bourbon, cinnamon, and sugar together, just enough to dissolve the sugar. Do not boil. Allow to sit for 20 minutes before Step 3.
Packed pitted cherries into jar snugly but do not smash.
Pour bourbon syrup over cherries and allow to cool to room temperature, loosely capped. Use leftover syrup for whatever cocktail you wish.
When completely cool, store in fridge for up to a year. One or two cherries at a time are enough for one cocktail garnish. Excellent in my peach whiskey sours.
