This was my go-to meal after 10-20 mile runs long ago when I ran marathons in the early 2000s. I first discovered this recipe online in 2004, attracted to the cute “Bumblebee Chili” named for the black beans and corn in the dish. The attribution link has long since disappeared and Google has not helped me locate it. Add sour cream and cheese on top if vegetarian. This can also be used as a dip. These are the adjustable basics:

  • Two cans (15 ounce) black beans (or less than 1 pound bag cooked)
  • 1 pound frozen yellow corn
  • Two cans (15 ounce) diced seasoned tomatoes for chili (Dellmonte‘s or Hunt’s brand) or season them yourself with chili powder, chipotle, cumin, etc.
  • One large yellow onion, chopped
  • 2 tablespoons olive oil
  • Sour cream
  • Corn/tortilla chips
  • Green onions
  • Shredded cheese
  1. Cook chopped yellow onion in oil until soft.
  2. Add black beans, corn, and tomatoes and same pot.
  3. Add about one can of water or less.
  4. Simmer and cover for 25 to 30 minutes. Serve with a dollop of sour cream and green onions. Also serve with shredded cheese on top and use tortilla chips as dips.
